The staff at the Towne House was largely integrated, giving African American employees the opportunity to express themselves through the culinary arts, while simultaneously engaging with the white community at the height of the segregationist South. The owners of the Towne House, Myrtle and Maude Jones, got along well with Elizabeth. Elizabeth even helped Mrs. Jones' youngest son, Sammy, get around due to a condition that affected his mobility. Elizabeth's relationship with her employeers suggest a voluntary racial understanding between blacks and whites through the most basic of human necessties, food.
